With the Salted Pig, prolific restaurateur Michael del Pietro leaves behind his signature Italian fare to try his hand at barbecue and Southern comfort food. Unfortunately, the Frontenac restaurant delivers mixed results. The Salted Pig hits the mark with crisp and juicy fried chicken, served in a cast-iron skillet. The moist and lightly smoked pulled pork is also respectable, served either as a sandwich or as an appetizer atop housemade potato chips. St. Louis-style ribs are fair, though they lack the wow factor of the better-known spots in town, and the kitchen seems to have a problem with executing seafood, as both the red fish and fish-of-the-day special were very overcooked on two separate visits. Go for the chicken, but there are far better spots for barbecue.

Project M Plus infuses Salted Pig eatery in California with desert hues

Earthy colours such as muted turquoise, sage green and brick red feature in this gastropub in California that was designed by Project M Plus to "stimulate the appetite and the senses".

The Salted Pig is part of an urban residential complex in Riverside, a city just outside of Los Angeles in the Inland Empire region. This is a new home for the restaurant, which first opened in 2011. It formerly was located in a small building several blocks away, which Project M Plus described as having a "rustic public house" atmosphere.

The owner brought in the multidisciplinary LA studio to create a different look and feel for the new location. The firm's founders, McShane and Cleo Murnane, "knew that a refreshed, playful design for the restaurant was needed to elevate the brand and charm their loyal customers".

Encompassing 3,400 square feet (316 square metres), the eatery sits at the base of a multi-storey apartment building. The building's exterior is accented with desert hues, such as tan and sage green – a colour palette that informed the restaurant's interior design.

"We really wanted to bring the natural beauty of the surrounding environment inside, where we could cultivate a sense of place and cosiness," said Cleo Murnane in a statement, adding that "warm tones stimulate the appetite and the senses".

Visitors step into an airy space that comprises a dining room and bar area. Numerous windows usher in daylight while also enabling passers-by to catch a glimpse of the interior.

The team incorporated industrial elements, such as concrete flooring and exposed ductwork. Arched openings help "soften" thresholds and add visual interest.

The ceiling is painted a brick red, offering a pleasant contrast to walls that are rendered in white or muted turquoise. In select areas, walls and columns are covered with grey-green tiles.

The dining furniture includes wooden tables, bucket chairs and leather banquettes. U-shaped booths are lined with honey-toned wooden louvres that lend a sense of warmth and intimacy.

Suspended above the booths are domed metallic pendants. Other types of lighting in the space include glossy peach table lamps and a chandelier made of glass orbs.

The gastropub's long bar is lined with wooden slats and is topped with terrazzo. Guests can enjoy cocktails while relaxing in chunky green stools with copper legs. Throughout the restaurant, ferns and cacti bring a little of the outdoors inside.

Overall, the restaurant is meant to have a "cohesive, unexpected material palette that is transporting and altogether satisfying", the team said.

Founded in 2007, Project M Plus has a diverse portfolio of branding, interior design and architectural projects. Other work by the studio includes a daycare in Los Angeles that features arched passageways, colourful walls and whimsical artwork.

The Salted Pig’s new home doesn’t have a sign over the door, and owner Ronaldo Fierro isn’t in a hurry to put one up.

“We’re used to being found by word of mouth,” he said in a phone interview.

The Salted Pig was one of the Inland Empire’s first gastropubs when it opened in 2011 on Riverside’s Twelfth  Street. That’s where it remained and built a following until it was transplanted to Riverside’s Main Street Pedestrian Mall.

The restaurant had a soft opening in mid-January. Since then, it has been ramping up to offer the same service as before. This week it added lunch hours.

The new restaurant was built to Fierro’s specifications in the Imperial Hardware Lofts, a mixed-use development on the mall at University Avenue. He originally hoped to open in late summer of 2018, but redesigns and delays forced him to stretch the timetable. He finally closed the original Salted Pig in October, while he was in the midst of a successful campaign to become a city councilman.

He said he didn’t lose any staff to down time.

The new restaurant has a smaller but more efficient kitchen than the original, according to Fierro.

“We love it,” he said. “We placed everything close together so everybody is one or two steps away from everything they need.”

The menu is mostly the same, with such favorites as roasted brussels sprouts, bacon fat popcorn, and the MSG Burger with slab bacon and Gouda cheese. As before, breads are made in-house as is the ketchup.

The Salted Pig, however, is still waiting for its liquor license to be approved so it can serve craft beer and cocktails. Fierro said he thought it would happen before the 2020 release date for Pliny the Younger, the wildly popular triple India Pale Ale from the Russian River Brewing Co. Distribution in Southern California, which usually begins in late February, according to the brewery.

The restaurant has a warm color palette with such features as a terrazzo bar and U-shaped leather booths partitioned with wooden louvers, according to the design firm Project M.

Eventually it will have patio dining, according to Fierro. And he said he would have a small, subtle sign designed.
